Cabbage conundrum

The simplest things are almost always the best.

When I ran through the possibilities about how to use the cabbage:

1) Cabbage rolls

2) Colcannon

etc. But all of them seemed too labor intensive. 

I decided on this:

Coleslaw salad.
I shredded the purple and green cabbage. I also shredded two carrots and mixed everything together.

Then I added in 1 Tbsp. of vinegar, 1/2 Tbsp. of mayonnaise, 1/2 Tbsp. of Greek yogurt plus enough sugar to mellow out the kick of the vinegar.

If you like sweeter coleslaw just add more sugar.

The coleslaw went on top of a bed of salad mix.

The flower petals are really eye catching.
