Creamy butternut squash dressing (vegan)


Lately I have been on a coleslaw binge. I have had it with salad dressing or with a more traditional Vegenaise + white vinegar dressing and once with a drizzle of balsamic and olive oil.

But today's coleslaw turned out the best. I wanted a slightly sweeter version of traditional coleslaw and I decided to use the last of the butternut squash I had in the fridge.

I threw a few ingredients together, gave it a whir with the immersion blender and I ended up with a creamy, dreamy and sweet concoction that had a nice kick of vinegar. Yum!



The coleslaw mix can be anything you want. Today I tossed together green cabbage, carrot, mini sweet red peppers, celery and fresh parsley.

The most important thing about this dish? It is the dressing. 

And, since it is Friday and I am in a great mood because I am off to see Prometheus later tonight, I am going to give you the recipe:-)

Creamy butternut squash dressing

Serves 1

Ingredients:

1/2 cup of cooked butternut squash
3 tsp of Vegenaise
1 tsp of balsamic reduction
ground black pepper to taste
enough water to create the consistency you would like

Instructions: 
 
Blend until smooth. 

That is it! Easy peasy.

I used it as a coleslaw dressing but I think it would also be terrific on a regular 'ol salad.

Use what you've got

Creamy coleslaw with honey roasted peanuts.

As I continue to eat down the contents of my fridge and pantry I am discovering strange things.

For the most part I have healthy ingredients in my refrigerator and cupboards but as I was digging around today I discovered a jar of Miracle Whip and a half full bag of honey roasted peanuts.

Now, I am not saying I feel obligated to eat everything in my fridge. If I found a container of deep fried Twinkies I wouldn't go about eating them. But the peanuts and Miracle Whip gave me an idea.



I combined:

2 cups of bagged coleslaw mix
1 Tbsp. of Miracle Whip
1 pinch of sugar
1 handful of honey roasted peanuts

I like my coleslaw heavy on the cabbage and light on the mayo. Feel free to add more mayonnaise or Miracle Whip if you like it creamier.

It was one very filling and delicious bowl :-)

Temptations

Is it strange that whenever I walk by this vehicle/backhoe/tractor with a forklift - whatever it is - I have the urge to hop on and take it for a joy ride??



And Connor, being a male, is always mesmerized by this large construction vehicle.


I finally broke down and purchased some new measuring cups and a new peeler.



I wasn't hungry for lunch for some reason so I just went with it and finally made something to eat when I did eventually get hungry at dinner time.

Bean and cheese burrito with a side of coleslaw.



Tonight I have a craving for collard greens - time to put more greens on the menu methinks.

When it's really, really good you know you are going to want more...

The coleslaw I had for lunch was delicious.

For dinner I decided to add in a little protein to the mix.


I went 'round the corner and picked up some dried salami.

Normally, I would make this dish with Aidell's apple sausage and trust me the combination of the apple sausage (crisped up in a saute pan) with the cool creamy coleslaw? You will be instantly transported to a state of bliss.

But, as usual, I made do with what I could gather in a few minutes.


The dogs enjoyed this:

Dried salami wrapped around apple slices.

 I crisped up some salami slices in a pan and added them to the coleslaw.

Cabbage conundrum

The simplest things are almost always the best.

When I ran through the possibilities about how to use the cabbage:

1) Cabbage rolls

2) Colcannon

etc. But all of them seemed too labor intensive. 

I decided on this:

Coleslaw salad.
I shredded the purple and green cabbage. I also shredded two carrots and mixed everything together.

Then I added in 1 Tbsp. of vinegar, 1/2 Tbsp. of mayonnaise, 1/2 Tbsp. of Greek yogurt plus enough sugar to mellow out the kick of the vinegar.

If you like sweeter coleslaw just add more sugar.

The coleslaw went on top of a bed of salad mix.

The flower petals are really eye catching.
