A motely crew

Tonight I tried to figure out what to do with this motely crew that I had in the fridge.

Starting from the bottom going clockwise: wonton wrappers, eggplant and potato curry, sweet potato puree and basmati rice.
The idea that hit me? Mini baked wonton cups!

I mixed some of the curry plus the sweet potato puree and white rice.
Press the wonton wrappers into the muffin tin.

Fill the cups 1/2 to 3/4 full

They went into a 375 degree oven for 12 minutes and this came out:



This is one of those thrown together recipes that ended up being delicious. 

The dip made the dish.

Plain yogurt mixed with a little sweet potato puree and plenty of chopped cilantro.
