Tonight I couldn't decide between mashed potatoes or soup - so I combined both!
It started with the sweet potatoes.
They went into the steamer for 8 minutes. Then I tossed the cooked cubes of sweet potatoes into a sauce pan and added 1 Tbsp. of this:
My sister says it is one of her favorite yogurts so I figured I would give it a try.
I used the hand blender and pureed the potatoes and yogurt until it was smooth.
Then came the squash - I added in about half of this container:
It ended up tasting great. The bulgarian yogurt is super tangy so that added a nice flavor to the soup.
I decided I had not had enough greens today so I made one of my standby dishes - garlic spinach.
I grabbed a couple of handfuls of frozen spinach and tossed in with garlic powder and olive oil in a pan on medium heat.
And tonight I did something unusual - Well, unusual for me anway - I had dessert!

ReplyDeleteThe Bulgarian yogurt is thinner than the greek yogurt. The unusual thing about the Bulgarian yogurt is that it has a really nice clean, slightly lemony flavor. I think it will work great for flavoring dishes.
