Moonlight salad

Yesterday my allergies were bothering me so I took some Benadryl.

For most people Benadryl makes them a little drowsy. Not me. It knocks me out. Completely.

As in, it was around noontime when I took the antihistamine and the next thing I know it is 8:30pm and I am making my moonlight salad.


I made an egg-less Ceasar salad dressing.

Ingredients:

1/2 cup of shredded Parmesan
2 cloves of garlic
2 anchovy filets
ground black pepper to taste
juice of one lemon
1 tsp. of Dijon mustard

Blend all of the above with an immersion blender and slowly drizzle in olive oil until is emulsified. I think mine ended up being about 3 Tbsp. of olive oil.

Drizzle the dressing over romaine lettuce and grate some extra Parmesan and black pepper on top.

And this salad tastes the best when eaten at 8:30 at night and you take pictures of said salad out on your patio at twilight :-)

  1. My hubs took some medicine yesterday at 1 in the afternoon, and didn't realize it was the drowsy kind. He slept ALL day! It really affects some people, but at least you got to wake up and enjoy this salad!

    Lol, agreed. I did have that salad for dinner and breakfast the next day :-)
