A wonderful evening and a fresh start


I had a wonderful dinner out under the stars last night.

I filled my plate up with corn, salad, rice and one piece of steak.



The green beans were tender with a little bit of crunch to them - perfect!



I was actually quite proud of myself for not letting the tender state of my stomach prevent me from going out and enjoying the evening.


I was careful about my food selections - everything was very low fat (except the meat of course) and I was careful to stop eating when my stomach was about 3/4 full.

So, I will be enjoying a low-fat, tons of vegetables/fruits and small amounts of proteins kind of diet for the rest of the week until my stomach gets back to normal.

What did I have for breakfast? Well, you can bet I am not going to sacrifice taste even if I have to cut the fat so I started with putting some peppers in with the rice I had simmering on the stove.

These peppers are fairly mild and similar in heat to jalapenos. 


I seeded one pepper and added three slices to the pot of rice.




Then I stir fried (using 2 drops of oil):

- 1 carrot, chopped
- a handful of broccoli florets
- a handful of coleslaw mix
- 1 clove of garlic chopped
- 1 green onion chopped
- 1 bunch of basil
- 1 handful of spinach
- 1 tsp. of soy sauce
- 1/4 tsp. of oyster sauce

I put a small amount of rice in the bottom.




Then I spooned a big helping of the vegetables on top.




And then I added 1 scrambled egg white.



All-in-all a very tasty breakfast.

  3. Lovely meal outside. Love the patio set. Love the bowl at the bottom too. I bought some peppers this week and need to goggle them as I have no clue what they are. lol
