Irish soda bread



I like to bake breads but I usually don't do it because I end up with way too much food. There is no way I can go through a loaf of bread before it gets stale.

And freezing bread? I think it ends up tasting awful when you pull it out of the freezer.

So yesterday I made an attempt at Irish soda bread for one.

This recipe doesn't really yield one serving but it does produce a small loaf that would give you enough slices for ,say, 3 sandwiches.

The dogs went crazy for this bread. They were camped out at the fridge when I placed the warm loaf on top of the refrigerator to cool.

This is why this morning I was left with this:

One slice for me and a slice for each dog and the loaf is half finished!

This recipe does produce a dense loaf.


I toasted up a slice this morning and had a mini sandwich for breakfast.

Tuna fish.
 
A small mason jar of Dunkin' Donuts coffee.

A juicy nectarine.


I think I will head to the store and pick up some yeast and try my hand at mini baguettes later today.

Irish soda bread with a twist

Makes 1 small loaf

Ingredients:

2 cups of All Purpose Flour
1/2 tsp baking soda
1/2 tsp of baking powder
5 oz. of Siggis non-fat plain yogurt
1/8 tsp of salt

Instructions:

Mix together the dry ingredients. Add in the yogurt and mix well. Sprinkle some flour on a clean surface and knead bread for a few minutes. Shape the dough into a ball and place in a round baking dish. Bake the loaf for 40 minutes at 375 degrees.

When the loaf is golden brown, remove from the oven and let cool.

Enjoy a warm slice with butter!

  1. oh this bread looks fabulous!

    Whenever bread starts to get stale I usually bake it in little cubes and make croutons!
