Watermelon quinoa salad

Watermelon quinoa salad with mint, cherries and pine nuts.
Today I wanted quinoa for breakfast but I wanted something a little different.

I set 1/2 cup of rinsed quinoa into a soup pan to simmer and I went to work on chopping fruit.

8 cherries with the pits removed.


Watermelon that was over ripe so it was a bit mushy but it still tasted fine.

A little chopped mint seemed like a great addition to the fruit party.



When the quinoa finished cooking, I let it cool and then folded it into the fruit.

I also added 2 tsp. of pine nuts.
 I added 1 tsp. of lemon juice although I think lime would work just as well.

This salad made a refreshing and cool breakfast. In other words it was a perfect start to a hot summer day.

A squirt of Miso Mayo went on top.

I am re-doing the pork and apples meal from yesterday. I want to tweak it a bit so hopefully a delicious recipe will be coming later today!
