When you can't decide - have them all!

This morning I couldn't decide between eggs, tacos or a salad for breakfast.

In the end, I decided to have them all!

Scrambled egg tacos with lettuce, Miso Mayo and hot sauce.

I scrambled one whole egg with three egg whites and added in one tsp. of nutritional yeast for a little cheesy flavor. I also sprinkled in some dried basil, dried parsley and a tiny dash of sweet paprika.

After the eggs were done, the assembly was simple. I put a generous handful of spring greens in the bottom of each taco shell then a hearty portion of scrambled eggs.

I squeezed some Miso Mayo on top and added some dots of hot sauce. 

The Miso Mayo adds a nice creamy flavor but I also think some avocado slices would have worked well too.
