Some like it hot

A mostly egg-white omelet with basil, tomato, mozzarella and a sprinkle of Frank's Red Hot sauce.  


I woke up just as the sun was rising and headed out for a nice and slow 2 miles before the day started to heat up.

When I got back I was craving omelets and apples. 

Oh, yeah, and hot sauce.

So, I grabbed what I had in the fridge:

Eggs, basil, diced tomatoes, Frank's Hot Sauce, olive oil, black pepper, parsley and mozzarella.

I did take pictures of the cooking process but for some reason all of the photos I take in my kitchen end up turning out really yellow.

Maybe it is the lack of natural light??

Someday I will figure out the rest of the nifty features in  Lightroom so that I can tone down or remove color saturation.

I only used one whole egg the rest was egg whites. So, it was a fairly trim omelet even though I added in some cheese.



And since you are probably wondering - Yes, Frank's Hot Sauce does taste pretty yummy on granny smith apples:-)

I am going to try my hand at making eggplant Parmesan later today.

A wonderful morning

It has been a wonderful morning. Very first thing, I took the dogs on a long walk. It has been in the '90s here lately and it is cooler today so a breezy morning walk was very welcome.

Then I came home and made this:

Smoked salmon omelet.
I don't know about you but if I open a package of smoked salmon I need to use it up within 2 - 3 days or the fish starts to be slimy and I just can't eat it then.

So, I whisked 1 whole egg and 2 egg whites together with a dash of salt, some cracked black pepper, dried basil and fresh chopped parsley.

It went into a saute pan on low with a little olive oil.

When the egg is almost set - add it pieces of smoked salmon. Carefully fold over the omelet and let cook a few seconds more and then plate.




I sprinkled some fresh chopped parsley on top and added a spoonful of Tofutti sour cream.




I also had a pear and a mug of coffee. I will need the caffeine boost when I am at the gym!

Yin and french toast

And so begins day 2 of my yoga challenge.

I did 20 minutes of Yin yoga as soon as I woke up. Those of you not familiar with yoga - Yin yoga is a style of practice that is mellow and restorative and consists of seated poses. 

Afterward, I definitely felt more relaxed and eager to face the day.

I had the last bit of a loaf of bread that I needed to use up. 

French toast with a greek yogurt topping and a sprinkle of cinnamon and maple syrup.

 I put 1 egg, 1 tsp. of milk and a pinch of salt in a shallow bowl and beat together. The bowl was fairly small so I cut one piece of toast into 3 pieces. It was delicious, slightly eggy tasting and I really liked how the greek yogurt was a nice tart contrast to the syrup.

I did have some of the egg mixture left over so I made a very thin crepe that the dogs shared.



I think veggies and fruit will play a heavy roll in my lunch. I am feeling the need for some greens!

I was planning on cleaning up my patio table which at the moment is piled high with books that I have read in the last couple of weeks or so.

I definitely have a reading addiction - I regularly run through 2 - 3 books in a week.  And I am now seeing why people are raving about the kindle just for the reduction it would make in my book collecting would be worth it. 


But it is a rare rainy day here in Silicon Valley so I will have to pick some kind of indoor project to do((

Ground turkey omelette take 2

I still had a 1/2 portion of my turkey omelette in the fridge.



I pulled out the meat, veggies and potatoes and put them in a sautee pan on medium heat.

 
When the potatoes had started to crisp up - I added in pieces of the egg. Then I added in 2 tsp. of my asparagus pesto.



It ended up being a green eggs and ground turkey kind of hash. It was delicious and hearty!

And even though it was a 1/2 portion of my breakfast from yesterday - it was still a generous portion. Sometimes I find it hard to believe the huge portion sizes of most entrees in restaurants.

Since the omelette filling contained onions, the dogs got a couple of pieces of plain omelette that I tore off and set aside before cooking. 



This morning was a tea kind of morning.



Happy Friday everyone!! My day will be filled with laundry and cleaning. 

But I do have an evening of music planned :-)
