Egg drop soup with turkey and corn

Egg drop soup with turkey and corn.


But before I enjoyed the soup I did have a small snack halfway through the afternoon.

Enter the juicer:



I gathered up a mix of veggies and fruit.

Celery, pears, apples and parsley.

The juice turned out slightly bitter - but in a good way.


While I was working around the house I decided to get a head start on dinner.

I filled a sauce pan with 3 quarts of water and added in this:

Carrots, a shallot, bay leaves, garlic and celery.

I let the pot simmer for over an hour until the liquid was reduced by half.

Then I pulled out the vegetables (I removed the bay leaves) and used my immersion blender to puree them.

The puree went back into the pot along with two handfuls of frozen corn, 1/2 a tsp. of black pepper and some turkey meat.

Then I whisked one egg white and slowly drizzled it into the simmering soup.

At this point you should add salt to taste.

The soup turned out great! I liked the chewiness of the corn and the pureed vegetables made the soup nice and thick without having to add cornstarch.

A bit of this, a bit of that

Breakfast this morning was a little bit of this - a little bit of that.

Muesli with milk and a spoonful of raspberry preserves and peanut butter, watermelon and blueberries and coffee.
 I am running low on fruit - time to go grocery shopping!



And I need to pick up some new breakfast options...



So far, it is blissfully quiet here this morning.

I am hoping it stays that way while I am out at the store - otherwise I will come home to a very unhappy ->

A quick start

I was more thirsty than hungry when I woke up this morning.

I combined 1/2 a banana, 3 clementine oranges, one scoop of Amazing Grass, 1Tbsp. of Udo's oil, a dollop of yogurt and 2 cups of water.



It came out much more watery than a smoothie. It was just what I wanted!



More construction here today. They are working on the gas lines so I may be forced to leave the house in order to just get warm :-(

Do you want cheese? Yes, please!

I bought some nutritional yeast during my last trip to Whole Foods.

I have been fascinated with this ingredient for a while. I have seen it used in a lot of different recipes. The whole idea about being able to enjoy cheese sauce without the cheese? Count me in.

First thing - I made a roux. I put a pat of butter in a sauce pan on low/medium heat. I added in a handful of flour and let it cook for a while (don't let it brown). Then a couple of splashes of milk and then the nutritional yeast.

The mixture was a bit thick at this point so I added in some white wine and a small amount of water. 

When the sauce was smooth and glossy looking I poured it over the broccoli.









The sauce had a slightly cheddar taste and was very smooth and creamy. A great substitute for cheese sauce in my opinion. I am eager to try it on air popped popcorn!

I also had an apple, a banana and three clementine oranges.

It has definitely been a day of odd eating - but my stomach is happy.

Rain = fruit

Rain, rain and more rain :-(

The white blobs in the photo are sheets of rain coming down.
With the dreary weather outside, I wanted something bright and cheery for breakfast.

What does that mean? Fruit, fruit and more fruit!

Oranges, apples, bananas all piled on top of a bed of vanilla flavored Oikos yogurt.

And I am happy to report another successful day on my yoga challenge. Today I did 30 minutes of sun salutations and standing poses. 

Muscle memory is a great thing. After just a couple of days of heading back into my yoga practice, I am starting to feel stronger and much less trembly when I do planks.

Caffeine did make an appearance this morning.

Tea of course!

I am going to work on my html skills today. Project of the day? Try to change the borders on my blog.
