Mac and cheese > oatmeal

I started out this morning seriously contemplating having oatmeal.

Then I ended up having this:

Quinoa  mac and cheese with corn and crispy 'chicken' nuggets.
But I am getting ahead of myself. While I was looking for the oatmeal I spotted this:

And I remembered I had this in the freezer:

And I had this to use up:

Add in some soymilk, nutritional yeast, Earth Balance blend, some corn starch, paprika, garlic, a dash of salt and pepper, some quinoa macaroni cooked al dente, some cooked red corn and three pieces of 'chicken' nuggets browned in the oven and you get this:

An extra sprinkle of paprika on top.
This was so good that I ate the whole thing BEFORE blogging. Shocking - I know!

The dogs were begging for some but I was not going to share.

Fine - I did give them some leftover pizza to compensate if you must know but only after I finished eating. I do have standards...

If you are looking for a mac and cheese recipe you can find a full recipe I posted here.

I make is a bit different every time but that is a good place to start.

I hope everyone is having a great Sunday!

Green apple slaw

Tonight's dinner was simple and delicious.

It started with this:

Four pieces went into the oven at 400 degrees. They cooked on each side for 8 minutes.

And then I combined:

1/2 of a green apple sliced into thin strips
1/8 of a red cabbage sliced fine
1 Tbsp of diced red onion chopped fine
1 carrot sliced into thin strips
2 tsp of Vegenaise
1/4 tsp of white wine vinegar
1/8 tsp of sugar
salt and cracked black pepper to taste

I mixed this altogether and let it hang out in the refrigerator for 30 minutes.

The meal all put together:

And, yes, Connor is still looking at me like this:

He is either plotting world domination (after successfully figuring out how to open the kibble bin) or sussing out how to peel the duct tap off the food container and again have free access to unlimited food.

Night all!

Grass appeal

The dogs are back to eating grass.

It is a bit hard to see in that shot but that is Connor scarfing down on some grass while Abby stands next to him waiting her turn.

And it is this one particular patch of grass they are obsessed with.

If I knew anything about plants I would plant some of this irresistible greenery in a couple of pots on my patio so they could nibble to their hearts content.

I also had a craving for greens for my dinner.

Baby greens with herbs, grilled Gardein 'chicken' crisps, quinoa and avocado in a strawberry balsamic dressing.

I enjoyed it using my favorite pink bowl.

And my latest favorite thing?

I am sure it is just the heat but I have been drinking glasses and glasses of this elixir.

Night, all!

Smooth moves

I ended up doing the Power Yoga - Total Body dvd.

I was surprised how much I liked it. The flow was slow and meditative but it kept you moving. I hate yoga practices that hold poses for a long time because I get sooo bored.

This tape went at just the right speed and had a nice mix of beginner and intermediate poses so you could tailor the practice to your needs.

For lunch I made another attempt at making nutritional yeast 'cheese' sauce.

I am working on a sauce that is lower in fat since all of the ones I have seen online use quite a bit of oil and/or nuts to get the sauce creamy.

This sauce looked pretty but tasted just OK. I will have to keep working on it.

I grilled up some 'chicken' tenders.

I also steamed some broccoli which I then smothered in sauce :-)

And I ate a juicy, ripe peach for dessert.

One last thing about the Rodney Yee Yoga Power Yoga tape - if you prefer an instructor who is very clear and isn't chatty or distracting, you will love this tape.

Rodney talks you through the poses, so if you are familiar with yoga, you won't even need to look up at the TV. This is a big plus in my opinion.

I want to just concentrate on my practice and not look up at the screen all the time or listen to an instructor who is trying to 'entertain'.

Night, all!
