Little house on the Prairie kind of morning

When I was at the store yesterday I spotted this.



I haven't eaten cereal for breakfast in years - the occasional bowl of oatmeal? sure - but never cold cereal.


But I was intrigued by the amount of Omega 3's and that it contained flax - something I have been wanting to include in my diet.


And it did make me feel very old fashioned that the first ingredient was sorghum. I think the last time I saw anything about sorghum was in the Little House on the Prairie books.






And the cereal was pretty yummy. It had a slight malty taste and just a hint of sweetness.


Topped with banana slices.


And the fact that the cereal were shaped in teeny tiny balls? Very cute.


I will definitely come in handy to have this cereal in the cabinet on mornings I don't want to cook.


I have also been trying to include more beans into my diet hence the chili I made yesterday. And since I cooked my own beans - I had a lot left over.




I almost always store things in freezer bags otherwise if I can't easily identify what is in the freezer - it tends to stay in there for years.


And now I will have a ready supply of beans for things such as tacos, soups or salads.


I was going to get a bunch of stuff done today - but it is working out to be a lazy Saturday. 


I might make it outside after I bolster myself with caffeine.

Enchirittos

I was planning on making chicken enchiladas tonight but, unfortunately, I forgot to pull the chicken out the the freezer this morning to defrost.

So, I had to make do with what I had on hand.

Green onion, baked beans, cheese, corn tortillas, enchilada sauce.

I spooned some of the enchilada sauce to cover the bottom of a pan.


Then I mixed together the chopped green onion, the shredded cheese and the rinsed beans.

I smeared some of the enchilada sauce on top of a corn tortilla and then spooned some of the bean mixture on top.



Then I rolled it up and put it seam side down in the pan.


I continued the process until the pan was filled.

A little bit of cheese, green onion and some more enchilada sauce on top.


They went into a 350 degree oven for 15 minutes.

They came out of the oven with the cheese nicely melted.




I added a dollop of sour cream on top.



Even though it wasn't the dinner I had planned, it turned out great!

And since they were a cross between enchiladas and a burrito I called them enchirittos.

Once More With Feeling

Trying this blogging thing one more time. Hopefully this time I will be more disciplined about posting.

I made some bean/rice cakes for breakfast. I started off with a few key ingredients.
Firm tofu, refried beans, rice, basil, garlic powder,  and sage. Oops, I forgot to add the cooked brown rice in that picture but you get the idea. And the spice jar that I thoughtfully obscured from view is the powdered garlic :-)

I mushed everything together and in the end came up with this.
 I put a bit of extra salsa on top. I used one that has a smoky flavor (my preference) but any old salsa would do. I added some orange slices which were an amazing shade of red/orange. The version I made yesterday turned out better - but alas no photos of that - which included an egg and panko breadcrumbs - the flavor and texture was much better with that version.

The dogs were out of luck with this meal since my beasts + beans is a very bad and odoriferous combination.:-)
