Avocado soup

I am getting a surprising amount of work done today. And when I broke for lunch I was in the mood for soup.


Avocado soup.
I tossed the following into a pot:


1 1/2 avocados
1 cup of coconut water
1 nectarine
1 tsp. of ponzu
1/2 tsp. of soy sauce
a sprinkle of onion powder
black pepper to taste
a pinch of salt


I pureed it with the immersion blender until it was smooth.


You can leave out the ponzu if you are not a fan of a citrus tang to your soup and just add in more soy sauce.


This soup turned out surprisingly good. I served it warm but I think it would be just as delicious served cold.




I managed to fix my dishwasher! No more hand washing for me :-)

Strawberry dream

I was craving fruit this morning so I decided to make a smoothie.



The ingredients:

Strawberries, oranges, a pear, coconut water and Amazing Grass.

When I bought that container of Amazing Grass I figured I would have a green drink once or twice and the mostly full container would be sitting in the back of the cupboard forever.

But take a gander at this:

An empty container!!
I really surprised myself - and I feel pretty proud at sticking to a very healthy habit of having a green drink everyday.

*Commence patting myself on the back*

The combination of strawberries and pear was really delicious!


And no coffee this morning because I am beginning to suspect that my 'anxious' feeling lately might just be the result of too much caffeine intake.

Laptops and lunch

Today was busy.

I tried installing Windows 7 on my laptop only to find out I didn't have enough RAM.

Off to the geek store to buy more RAM.


I tear apart my laptop - get it installed - load Windows 7 - which, of course, now cannot recognize my graphics card.

Sigh, it is a work in progress.

So, no posts of dinner tonight as I will be doing endless searches online for a solution to my laptop problems - but I will post my lunch.

Quinoa with roasted eggplant.
 I combined the leftover quinoa (1/2 cup) with the leftover eggplant mixture (1/2 cup). Tasty, fast and satisfying. 




 I also picked up this at the geek store:




It turns out that trying to mask the flavor of the coconut with berry flavor? Not such a great idea.


I did further research on my motherboard and possible upgrades and the geek consensus seems to be - there is no easy way to upgrade the video card on this laptop - most of the posts included exclamations of glee, "Great excuse for a new laptop!!!"


At this point in the laptop dilemma I am faced with two choices:


1) Just put up with the default generic video setting which is making every image distorted on the screen and just hope my postings will look OK.


2) Do the crazy option of getting a new laptop that has a setup that will easily allow me to upgrade.


It takes me forever to decide on buying anything so I am sure it will be option 1.

The game plan and herbed egg whites

I looked over the eating plan my sister's had tried.

The important highlights?


- lots of fruits and vegetables

- low fat (but not non-fat)



- small amounts of protein at almost every meal


- eating small portions 


- no dairy


So that will be my game plan for the moment. 


By the time dinner rolled around I was ready for some protein.


Herbed egg white sandwich.

I scrambled 3 egg whites with a pinch of dried basil and parsley.


An Orowheat Sandwich Thin went into the toaster.

I also had a bit of the coconut juice left so that was my drink with dinner.




And I had another bag of the Brainberries.




I am surprised by how much I like these blueberries. I have been avoiding blueberries at the local store because they have been too sour. But I was thrilled when these Brainberries turned out nice and sweet.
