Hi all! I can't believe it has been over a year since my last post. I have had a busy year. I went back to school and earned my Certificate in Project Management.<br />
<br />
Now that I have finished with school, I am busy searching for full time job while I keep occupied with consulting work. But today I had that creative itch and decided to do a post.<br />
<br />
The second reason I have for starting to post again - while I was busy studying I managed to pack on the traditional 'freshman 15' - Bleh(( The last time I lost a significant amount of weight was when I was doing a ton of cooking. *Fingers crossed* that it works this time!<br />
<br />
This breakfast is great for a lazy weekend morning. I started with the home fries. I peeled and diced up half of a Japanese yam (the kind with red skin and white flesh). I heated up a frying pan on medium heat with 1 tsp of coconut oil. I sauteed the yam until browned on one side then I turned the heat down to low, add in 1 Tbsp of water and used a lid to cover the potatoes. I allowed them to steam until tender (5 - 8 minutes).<br />
<br />
I removed them from the pan and put them in a dish. I sprinkle them with a little soy sauce because I like to cut the sweetness with a little salt.<br />
<br />
Then a little bit more coconut oil went into the pan along with the tortilla chips. I found ones that I really love at Whole Foods.<br />

They are the perfect combination of a rice cracker and a corn chip. I highly recommend them.<br />
<br />
While the chips sizzled in the pan I whisked 2 eggs with a pinch of basil, parsley and fresh cracked black pepper. I turned the heat to low and poured the eggs over the tortilla chips. If you have cheddar cheese on hand add in a generous handful at this time. Cook the eggs to your liking and put them on your plate. I folded in some salsa to the eggs and then added a little extra salsa on top.<br />

The richness of the coconut milk and the combination of salty, sour and savory with the gorgeous perfume of lemongrass makes this dish a heavenly comfort.</span></span><br />

<span style="font-size: large;"><span style="font-family: "Trebuchet MS", sans-serif;">I almost didn't make this because I was missing one very important ingredient - the limes. </span></span><br />

<span style="font-size: small;"><span style="font-family: inherit;">Add oil to the pan or dutch oven over medium heat. Add in the cardamon pods, cinnamon sticks and red curry paste. Fry for about 2 minutes until the spices become aromatic.</span></span><br />

<span style="font-size: small;"><span style="font-family: inherit;">Add in the chopped shallots and onion and allow to cook for another 2 minutes or until the onions are golden brown. </span></span><br />

<span style="font-size: small;"><span style="font-family: inherit;">Toss in the beef and curry mixture and cook for another 5 minutes. Then add in the rest of the ingredients and allow to simmer for 25 - 30 minutes. The curry is done when the potatoes and carrots are fork tender.</span></span><br />

<span style="font-size: small;">Combine the yogurt, cucumber, lemon juice, shallot, parsley, garlic, black pepper and salt in a bowl. Mix well, cover and store in refrigerator for at least 1 hour.</span></div>

<span style="font-size: small;">Just before eating, take the tzatziki mix out of the refrigerator. Chop the chicken into bite size pieces. Dice the sweet red pepper. Add the chicken and sweet red pepper to the tzatziki mix.</span></div>

I attempted to make what was going to be cream of spinach soup but it turned out, well, let's just say that it went downhill in a spectacular fashion.</span></span><br />

<span style="font-size: large;"><span style="font-family: "Trebuchet MS",sans-serif;">But early this morning I noticed (that for the billionth time) I was out of kibble - so yesterday's cooking disaster was magically transformed into a pork congee for the dogs.</span></span><br />

<span style="font-size: large;"><span style="font-family: "Trebuchet MS",sans-serif;">Not really all that magical since I did have to add in a bunch of broth, brown rice, a pork chop and let everything simmer for a couple of hours:-)</span></span><br />

<b>Ingredients</b>:<br />

<u>For the meatballs:</u><br />
<br />
1/2 lb of ground turkey<br />
2 cloves of garlic, minced<br />
1/4 cup of grated Parmesan cheese<br />
1/2 cup of bread crumbs<br />
1 egg, beaten<br />
1/2 tsp of basil<br />
1/2 tsp of oregano<br />
1/2 tsp of black pepper<br />
1/2 tsp of onion powder<br />
1/2 tsp of dried parsley <br />
1/4 tsp of red pepper flakes<br />
<br />
<u>For the soup:</u><br />
<br />
4 cups of chicken broth<br />
1/4 tsp of onion powder<br />
1/4 tsp of garlic powder<br />
1/4 tsp of olive oil<br />
2 carrots, chopped<br />
2 cups of the greens of your choice, chopped<br />
1/4 cup of orzo<br />
<br />
<b>Instructions:</b><br />
<br />
Combine all of the ingredients for the meatballs and form them into small balls. Place on a plate and keep in the refrigerator until needed.<br />
<br />
Add the oil into a sauce pan on medium-low heat and add in the garlic and onion powder. When it becomes fragrant add in the carrots and the broth. Bring everything up to a boil and then add in the orzo and drop in the meatballs. Cover, turn the heat to a high simmer and let cook for about 10 minutes.<br />
<br />
After 10 minutes, test that the meatballs are cooked through and that the orzo and greens are tender.<br />
<br />
Serve immediately and top with a sprinkle of grated Parmesan. <br />
