It's all about the portions

It was another one of those early mornings.


Something tells me I shouldn't be up before the street lamps turn off...

But since I was awake I decided I might as well get busy.

I put the beans I had soaking overnight on the stove to simmer.

I pulled out this from the refrigerator:



It says it is a portion(s) and I was planning on having it for dinner but I knew it was way too big for one meal.

The dogs got the better end of this portion dilema.

The portion on the right is the one destined to be my dinner. The three on the left will be the dogs breakfast and mine as well.
I cooked up a mix of 1/2 quinoa and 1/2 basmati rice.

The halibut went into a saute pan on medium heat and got a quick sear.

I also had some pine nuts, olives and yogurt in the fridge so I created a sauce for the dog's breakfast.


I did soak the olives in water for a bit - otherwise they would have been too salty for the dogs.

This was my meal.

Quinoa and rice with seared Halibut plus seasoned nori strips, miso broth and some of the cooked kidney beans.

I ended up eating all of the fish, most of the rice/quinoa, all of the miso broth and only a couple of bites of the beans.

The beans will be making an appearance later today :-)

Rice, egg and miso, Oh my!

I am going to share one of my favorite breakfasts:
 
Miso broth and a poached egg over seasoned rice.

I cooked 1/3 of a cup of rice with 2/3 a cup of water. When the rice was finished cooking (about 10 minutes) I sprinkled in some soy sauce.


Then I made a simple broth with miso - (1 cup of water simmered with 1 Tbsp. of miso).



Mmmm, miso broth!

How do you eat this? With lots and lots of these:

 
This is my usual process:

First I break up the egg and mix it with the rice.



Then I take a strip of nori and dip it into the miso.

Incoming!

Everyone into the pool.

The dunk.

Take it out when it becomes pliable - this takes about 3 seconds.

Lay the nori over the rice/egg mixture.

Place your chopsticks on either end of the nori.

Pinch the nori together, scooping up a bit of the rice and egg.

And bring that little nugget of deliciousness straight to your mouth.

I was horrified when I realized that I only had 10 pieces of nori left!!! This led to me digging around the cupboards for more but all I ended up with was this:

Two containers of nori strips.

Both were empty:-((

Which made me realize 2 things:

1) I need more nori strips

2) I eat an enormous amount of seaweed

At this point, I am guessing a good 30% of my body is made up of kelp. I am hoping that this is a good thing.

The dogs are getting an extra special treat later today AND I am going to try my hand at cooking something I have never cooked before.

Breakfast parfait

On my last trip to Target I picked up a very cute parfait glass.

So this morning I pulled out some leftover rice I had in the fridge and put it in a pot with some salsa and heated it on low.

The rice was the first layer of the parfait then a spoonful of black beans.


I mashed 1/2 an avocado with a spoonful of greek yogurt.




I have a bunch of cherry tomatoes to go through so I pan roasted some in a pan with olive oil.





The last of the beef went into a hot pan.







I topped the beef with cilantro and green onion.




And a big mug of coffee.



As far as savory breakfasts go this one was a winner.

And I really like the parfait glass because it is a great portion size. 

I am on a mission to find some Zout which is supposed to work wonders on stains.

A motely crew

Tonight I tried to figure out what to do with this motely crew that I had in the fridge.

Starting from the bottom going clockwise: wonton wrappers, eggplant and potato curry, sweet potato puree and basmati rice.
The idea that hit me? Mini baked wonton cups!

I mixed some of the curry plus the sweet potato puree and white rice.
Press the wonton wrappers into the muffin tin.

Fill the cups 1/2 to 3/4 full

They went into a 375 degree oven for 12 minutes and this came out:



This is one of those thrown together recipes that ended up being delicious. 

The dip made the dish.

Plain yogurt mixed with a little sweet potato puree and plenty of chopped cilantro.
