A rainy day lunch

Since I missed out on the festivities yesterday, I decided to do a return trip to this wonderful place:





My brother had a 'wet' chicken burrito.

That is a knife and fork my brother stuck in the burrito - but it looks like something is dangling over the burrito.


Three types of fresh salsa.

My favorite was the chunky salsa.


I went with the soft pork tacos.


The pork was really tender and I really like that these come without beans or cheese.



My sister brought back some fresh tofu from her tour of the local tofu factory - I need to figure out a great use for it tonight.

Lettuce tacos

The day was busy, lots of walking with the dogs and I did stop in to visit a friend.

It turns out, even if the dogs don't want to go out in the rain - it still needs to be done.

After a trip to the store I cooked up this. 

green leaf lettuce and scallions, cherry tomatoes and avocado.

Black beans.


Browned strips of beef with cherry tomatoes.


With avocado and green onions.

A surprising find

We ended up leaving later than expected to check out the European market. We decided we were both hungry so we stopped at a taqueria.


The menu was extensive.

I ordered two soft tacos with pork.



The meat was full of flavor and nicely charred on the grill. The green sauce on top put it over the top. 

My friend ordered the hard tacos with beef.


She said her tacos were equally delicious!

Then it was time to hit the market.


The produce was varied and vibrant. I didn't take any pictures because the market was so crowded you could barely get around everyone. Clearly this market is very popular.

I picked up some french cheeses and a bunch of other delicious items that I am sure you will be seeing later this week on the blog. :-)


Time to go watch the Superbowl (for the commercials not the football).

You can never have too many tacos

Dinner tonight was easy peasy thanks to this:



I do have to say - Gardein is quickly becoming my favorite meat alternative.

I cut an edge off the bag and popped it into the microwave. 



The package directions said 2 1/2 minutes but with my underpowered and craptastic microwave it was more like 3 1/2.

Hmm, what to make with this? I know -  a veggie version of pulled pork tacos!

The rest of the ingredients - 

Lettuce, carrots, avocado and green onions.


Let the assembling begin:

Lettuce and the bbq pulled shreds on a white corn tortilla


Carrots


Avocado


Scallions




The extra avocado made a nice prop to hold up the tacos.
