The ultimate pair: Jam and Eggs

Scrambled eggs on a bed of spinach tossed with Strawberry balsamic vinaigrette.
So, I have seen the eggs and jam combo on blogs lately and figured I would try it.

I ended up tweaking it a bit because when I woke up this morning I just couldn't stomach the idea of the cloying sweetness of jam.

Instead I tossed some baby spinach with some Strawberry balsamic vinaigrette (just the level of sweet I could handle).

Then I scrambled up some eggs with some nutritional yeast, shallots, fresh thyme and a dash of salt and pepper.

When the eggs were cooked I tossed in some chopped tomato and breakfast was served

 

I was trying out this new instant coffee I picked up at the store the other day.




This looked really promising and it was really strong which I liked but it did end up being a bit too bitter. 


And I made myself a little fruit salad to go with my eggs and kinda-jam.





I am contemplating quitting the YMCA because I haven't been making it to the gym like I used to. 



Then I thought, "Well, I have only gone to 2 of the yoga instructors classes - why not try all of them before the membership would expire at the end of the month?"


Which I think is a great idea. So, tomorrow I will be up at the early hour of 6:45 to hit Flow Yoga. My goal is to try most of the flow yoga classes over the next week.

Abby slept much better last night so we are going to head out for a nice, slow meandering walk to start our day:-)

The perfect summer dish

Watercress salad with white peaches and watermelon.

This salad is the perfect summer dish. 

I mixed together 1 cup of watercress with two cups of red leaf lettuce and tossed everything with my new favorite dressing:



The peppery bite of the watercress went really well with the sweetness of the peaches and watermelon. 

This was a very light and refreshing salad. I will be sad when summer ends and this endless supply of juicy fruit ends.

Some creamy goat cheese would have been great in this salad but I resisted the urge to run to the store to pick some up.  And, yes, the eating down my pantry project continues...

Grass appeal

The dogs are back to eating grass.



It is a bit hard to see in that shot but that is Connor scarfing down on some grass while Abby stands next to him waiting her turn.


And it is this one particular patch of grass they are obsessed with.





If I knew anything about plants I would plant some of this irresistible greenery in a couple of pots on my patio so they could nibble to their hearts content.



I also had a craving for greens for my dinner.


Baby greens with herbs, grilled Gardein 'chicken' crisps, quinoa and avocado in a strawberry balsamic dressing.




I enjoyed it using my favorite pink bowl.






And my latest favorite thing?




I am sure it is just the heat but I have been drinking glasses and glasses of this elixir.
