Crepe-tastic

Lesson learned - do not watch Eat, Pray, Love before you make breakfast because you will end up making something like this:

Ham and Gruyere cheese crepe with a side of blackberries.

I used a simple crepe recipe I found here but I employed the technique I found at Baking Bites.

These were really great - if you have the time in the morning I would really recommend these.

I went to the trouble of crisping up some deli ham in a pan and layered that on the crepe along with thin shavings of Gruyere cheese. 


Since the dogs were very interested in the crepe making - they got these cute mini-crepes -

And on the side

Ok, this is why caffeine should come before photographs - I forgot to include a picture of my side dish of protein. 


I whisked together 1/2 an egg yolk and 2 egg whites with a pinch of salt, some black pepper and a pinch of dried basil.

When the eggs were almost done (cooked on low heat) I folded in a few pieces of the leftover ham and then sprinkled some fresh parsley on top. 

Note that the portion size is small - the plate the eggs are sitting on is not much bigger than the saucer for a tea cup.

And, no worries, a couple of teeny, tiny pieces of ham managed to fall into the beasties gaping maws:-)

Pancake love

Last night was a tough one. Abby was up most of the night with a stomach ache((((

But after I gave her some stomach medicine and lots of belly rubs she is as right as rain this morning!
To celebrate Abby's miraculous recovery I made pancakes this morning. I used the good old fashioned Bisquick pancake mix. 

My first pancake turned out like this:
Isn't it a beauty?? And it was kind of shaped like a heart.
And then I ate them like this - 
Loaded with maple syrup and a pad of butter melting on top. Mmmmmmm.

Hah! fooled ya. Nope I at mine like this - 
 Two slices of country ham with a drizzle of mustard and eaten in taco fashion. 
This seemed like a good idea at the time - but it really didn't go together - I ended up eating them separately.

For the second pancake I did drizzle the tiniest bit of maple syrup on top - and that was amazing.

And before I started eating - I was feeling guilty that it wasn't healthy enough so I added some orange slices.
