Tortilla Scrambled Eggs with Yam Home Fries
Hi all! I can't believe it has been over a year since my last post. I have had a busy year. I went back to school and earned my Certificate in Project Management.

Now that I have finished with school, I am busy searching for full time job while I keep occupied with consulting work. But today I had that creative itch and decided to do a post.

The second reason I have for starting to post again - while I was busy studying I managed to pack on the traditional 'freshman 15' - Bleh(( The last time I lost a significant amount of weight was when I was doing a ton of cooking. *Fingers crossed* that it works this time!

This breakfast is great for a lazy weekend morning. I started with the home fries. I peeled and diced up half of a Japanese yam (the kind with red skin and white flesh). I heated up a frying pan on medium heat with 1 tsp of coconut oil. I sauteed the yam until browned on one side then I turned the heat down to low, add in 1 Tbsp of water and used a lid to cover the potatoes. I allowed them to steam until tender (5 - 8 minutes).

I removed them from the pan and put them in a dish. I sprinkle them with a little soy sauce because I like to cut the sweetness with a little salt.

Then a little bit more coconut oil went into the pan along with the tortilla chips. I found ones that I really love at Whole Foods.


They are the perfect combination of a rice cracker and a corn chip. I highly recommend them.

While the chips sizzled in the pan I whisked 2 eggs with a pinch of basil, parsley and fresh cracked black pepper. I turned the heat to low and poured the eggs over the tortilla chips. If you have cheddar cheese on hand add in a generous handful at this time. Cook the eggs to your liking and put them on your plate. I folded in some salsa to the eggs and then added a little extra salsa on top.
